2 tbl. olive oil
1/4c. minced garlic
6c. chopped plum tomatoes, peeled and seeded, juices reserved
3-4 sprigs basil
1 tbl. chopped basil
salt and pepper as needed
Heat the olive oil in a 2 qt. saucepan over medium heat until it shimmers.
Add the garlic and sauté, stirring constantly, until its aroma is
apparent, about 30 seconds.
Add the tomatoes and reserved juices, along
with the basil sprigs, to the pot, and bring the sauce to a boil. Reduce
the heat to low, and simmer the sauce 20-25 minutes. Remove and discard
the basil sprigs. Add the chopped basil and simmer
until very flavorful,
about 5 minutes. Taste the sauce and adjust the seasoning to
taste with
salt and pepper.
