Basic Italian Basil Pesto

1/2c. lightly packed chopped basil leaves
1/4c. Parmesan cheese
1/4c. toasted pine nuts
1 clove minced garlic
3 tbl. olive oil

Put basil in food processor and process until the basil is evenly chopped. Add the cheese, pine nuts, and garlic, and scrape down the sides and bottom of the bowl. With the processor running, gradually add the olive oil until a thick, heavy paste forms. It should have a distinctly coarse texture, but not oily.
