Chocolate Beet Cake

Note: This is for those of you who do not like beets or are getting tired of them. We made this cake tonight and it was good…except that my husband decided it needed frosting. So guess what? He frosted it!!

4 oz. unsweetened chocolate w/ ¼ c. oil
1 ¾ c. sugar
3 eggs
3/4 c. oil
2 c. pureed cooked beets
1 tbl. vanilla

Melt chocolate and oil in a pan until smooth. Combine eggs with sugar, beat until fluffy. Then add oil, beets, chocolate mixture and vanilla.

Gently stir in the following dry ingredients:

1 ½ c. flour
½ c. whole wheat pastry flour
2 tsp. baking soda
¼ tsp. salt

Gently stir until well mixed. Pour into greased and floured Bundt pan. Bake at 350 degrees until toothpick comes clean.

(Can use white flour instead of pastry or wheat flour.)
