½ c. sesame seeds
1 c. sunflower seeds
2 c. grated beets
2 c. grated carrots
½ c. minced onion
2 eggs lightly beaten
1 c. cooked brown rice
1 c. grated cheddar cheese
½ c. oil
½ c. finely chopped parsley
3 tbl. flour
2 tbl. soy sauce or tamari
1 clove garlic, minced
1/8-1/4 tsp. cayenne pepper
Brown sesame seeds in a skillet (3-5 minutes). Transfer to a dish. Repeat process for sunflower seeds.
Combine beets, carrots, and onion in a bowl. Stir in the toasted seeds, eggs, rice, cheese, oil, flour, parsley, soy sauce, and garlic. Mix with your hands—they work best. Add cayenne (however much you prefer). Mix well.
Shape patties and place on a buttered baking sheet. Bake about 350 degrees until brown around the edges. Unless they are very large, they may not need to be flipped. Serve alone or on a bun.
