12 small or six medium or a couple of large beets, scrubbed
2 tbl. maple syrup
1 tbl. finely grated fresh ginger
¼ c. butter
1 tbl. minced garlic
1 tbl. soy sauce or tamari
Place beets in a small roasting pan with ½ c. water. Cover with foil and bake until beets are tender when pierced.
Preheat the broiler. Allow beets to cool slightly, then run under cool water and slip off the skins.
Slice into rounds.
Melt the butter in a small pan over medium heat. Stir in the maple syrup, garlic, ginger, and soy sauce or tamari. When ingredients are thoroughly combined, remove from heat.
Put the beets in a shallow baking pan and pour the maple syrup mixture over them. Broil, stirring occasionally, until tender, 5-10 minutes.
