Cook corn in boiling water. Set ears aside and add kale to corn water with 2 tsp. salt. Cook until kale is just tender. Drain and finely chop. Toss kale with the following ingredients:
cooked corn kernels
1 large red and 1 large green bell pepper, diced
1 large tomato, diced
1/4 c. olive oil
1 small sweet onion, minced
1 clove garlic, minced
2 tbl. fresh lemon juice
1 1/2 tsp. Cajun Spice Seasoning
Note: make your own Cajun seasoning with 1/4 tsp. salt, and a big pinch each of cayenne pepper, frshly ground black pepper, dry mustard, crushed fennel seeds, and dried thyme.
