Zucchini and Summer Squash with Crispy Cornmeal Coating

Mix 1 c. cornmeal with salt, pepper, and any herbs or spices if you choose to use them. Cut squash into long, narrow strips or thin circles if working with Roly Polys. Dip into flour and then into a beaten egg. Then did into the cornmeal mixture.

You can either fry in oil or lightly fry in a little butter and olive oil. Salt and serve. Enjoy!
