4 green onions, sliced
2 C thinly sliced potatoes
2 C chicken broth
4 T butter
2 C milk chopped parsley
Sauté the green onions in butter for 3 minutes, then add potatoes and chicken broth.
Simmer until potatoes are tender-about 15 min. Mash well with a masher. Add milk and garnish with parsley. May be served hot or cold.
Note: potato soup is hearty and you can sneak other veggies in there too. You can literally have potato soup ready in 30-45 minutes which makes it a great fast food when on the go this busy season.
Serve with toasted potato bread. Enjoy!
