2 tbl. olive oil or butter
1 clove garlic, minced
¼ tsp. ground ginger
½ c. chopped basil
1 onion, finely chopped
2 medium tomatoes, chopped
4-5 c. chopped greens
Salt and pepper
Sauté onion in oil. Cook until soft, about 5 minutes. Add the garlic and cook, stirring frequently, about 5 minutes. Add the tomatoes and ginger. Continue cooking the mixture, stirring occasionally, until thickened, about 5 minutes. Stir in the chopped greens and cook until wilted and tender, 3-4 minutes. Stir in the basil just before removing the greens from the heat. Remove from heat, season with salt and pepper, and serve hot.
