Melon with Lavender Syrup

½ cup sugar
½ cup water
¼ cup sweet dessert wine (Sauternes, Grenache or sweet Riesling)
2 Tbsp orange juice
¼ cup lavender flowers (fresh or dried)
1 large ripe melon, cut into cubes.
Fresh mint leaves

Bring sugar, water, wine and orange juice to a boil, reduce heat and simmer 5
minutes stirring once or twice to dissolve sugar. Add lavender flowers. Remove from heat, cover and steep 1-2 hours. Strain out lavender flowers, pressing on pulp. To serve, pour syrup over melon, gently toss. Garnish with mint leaves.

Makes 4-6 servings
