Potato Bread

1 medium potato
2 T butter
2 pkg. yeast
2 T sugar
6 ½ to 6 ¾ C flour
1 T Salt  

Cook potato in 1 ½ c. water until tender. Cool to lukewarm. Set aside 1/2 C of cooking liquid. Mash potato in the remaining liquid, adding water if needed to make 2 C potato mixture.

Soften yeast in reserved 1/2 C warm cooking liquid. Combine potato mixture, yeast mixture, sugar, butter, and salt. Mix well. Stir in 2 C flour. Beat well.

Let rise in warm place until doubled. Stir down. Add enough flour to make it kneadable. Knead. Place in greased bowl and let rise again until double.

Divide dough into 2 loaves. Place in greased bread pans. Let rise. Lightly brush tops with milk and dust with flour.

Bake at 375 for 40-50 min. Makes 2 loaves.
