Red Potatoes and Wilted Greens

1 lb. small red potatoes
1 tbl. butter
1 tbl. olive oil
1 small glove garlic, minced
4 c. kale or spinach

Boil potatoes until tender. Drain. Then slightly brown potatoes in olive oil and butter. Add garlic. Cook until golden. Add greens and cook, covered, 3 minutes or until greens are wilted. Season with salt and pepper. Can add red chili flakes, shallots, bacon, ham, etc…
