1 C shredded cabbage
2 1/2 C grated potatoes
1/4 C sliced scallions or chopped onion
1 glove minced garlic
1 egg, beaten
1 1/2 tsp salt
1/2 tsp black pepper
1/4 C butter
2 Tbl oil
sour cream or applesauce, optional
Place the shredded cabbage in a steamer basket. Steam until tender, 15-20 minutes. Squeeze as much of the water out of the potatoes as possible (makes for a crispier potato). Combine the potatoes, cabbage, garlic, egg, salt, and pepper in a bowl. Mix well and then use your hands to form thin, loose patties. Combine the butter and oil in a skillet. Cook patties until done to your liking, 7-10 minutes. Flip and cook until done. Top with sour cream or applesauce if you choose.
Note: This recipe adds the tang of cabbage. It is great topped with an egg for breakfast or as a side dish.
