1 medium green pepper, diced
1 tbl. olive oil
1 c. corn
1 c. sliced fresh mushrooms
2 c. cooked brown rice
¼ c. chopped green onions
2 cloves minced garlic
1 can kidney beans
½ tsp. cumin
Sal and pepper to taste
2 flour tortillas
Cheese and salsa
Sauté pepper, mushrooms, garlic until tender. Add the rice, beans, corn, green onions, cumin, and salt and pepper. Cook for 4-6 minutes until heated through.
Spoon ¾ c. on to each tortilla. Sprinkle with cheese and drizzle with salsa. Roll up tortilla burrito style. Serve with watermelon…or cantaloupe. Dinner is ready!
