Roasted Root Veggies

You can add turnips, beets, winter squash, carrots, potatoes, or whatever you have to mix together.

Trim the skin on the winter squash and cut meat into small cubes. Toss all in a healthy serving of olive oil. Sprinkle with sea salt. Roast in a 400-450 degree oven until tender.

This is pretty and also a great way to cook up these veggies.
