Chop beets, stems, and leaves into narrow slices. Sauté some garlic in olive oil and a little butter. Add beets, greens, and stems to the pan. Sauté until tender (about 5 minutes). Now you are ready to add this to any special dish.
Pizza: Make your pizza up and then spoon this mixture onto the cheese.
Pasta: The kids will love this. Sarah cooks pasta and then adds her butter and cheese. Once the cheese is melted, she adds her beet base. The pasta turns a pretty red, which kids love! Tastes good, too!!
Veggie stir fry: When we have veggies stacking up around here, we sauté the beets and then to that mixture we add any kind of greens, onions, whatever we have too much of and then stir fry. We usually eat it plain or served with spaghetti noodles.
