Tomato and Grilled Bread Salad

Heat grill. Take a ½ lb. loaf of country bread, cut into ¾” slices. Brush both sides with olive oil.

Grill until lightly charred on both sides. Cut into large cubes.

In a bowl, toss bread cubes with about 4 c. shopped tomatoes, 1-2 c. chopped cucumber, and some torn pieces of basil. Drizzle with olive oil, vinegar, and salt and pepper to taste. Toss and serve.
