Spicy Pineapple Zucchini Bread

3 eggs
2 c. sugar
1 c. oil
2 tsp. vanilla

Beat the above ingredients until thick and foamy.

3 c. flour
¾ tsp. nutmeg
2 tsp. baking soda
1 ½ tsp cinnamon
1 tsp. salt
½ tsp. baking powder

Combine the dry ingredients and then mix with the liquid.

Stir in 2 c. shredded zucchini, 8 ½ oz. well drained crushed pineapple, 1 c. chopped nuts, and 1 c. raisins.

Mix well and pour into 2 greased and floured bread pans. Bake at 350 for about 1 hour (until toothpick comes out clean).
