Sautéed Shredded Zucchini with Sweet Corn

3 tbl. butter
1 medium shallot, minced (or onion)
4 medium squash, shredded
2 ears corn, kernels cut away with a knife
1 tbl. minced chives

Heat butter in pan. When the foaming subsides, add the shallot and cook,
until soft, 2-3 minutes. Add the zucchini and corn and cook until tender,
about 7 minutes. Stir in the chives, salt and pepper.
